Björn Frantzén – the mind behind one of the world’s most prestigious restaurants, Frantzén in Stockholm, which was recently awarded three Michelin stars – is bringing his first-ever overseas location of The Flying Elk to Hong Kong. The restaurant is set to open this June on the 16th with a unique experience for Hong Kong and is ready to start taking reservations today.
The Flying Elk opens the door to a unique contemporary dining experience by Björn Frantzén. In a setting best described as a modern Nordic Cabin, we serve genuine food with influences from all over Europe. Enjoy medium-sized dishes to share, straight from the fire pit and straight from the heart – all made for easy dining with friends and family. Whether Nordic produce, Nordic flavoring or Nordic cooking techniques, you will taste the heritage of Swedish 3-Michelin star awarded Chef Björn Frantzén throughout the gastronomy.
The restaurant name derives from one of Sweden’s oldest folklore, which tells the tale of a gigantic elk adorning an ornate crown, flying over the forests of Jämtland. Throughout history, many hunters have told stories over pints of ale in old taverns and cabins about their attempts to capture this flying elk, and how the fantastic beast – believed by many to be the true king of the forest – escaped their grasps every time.
Behind this intriguing name is the spirit of the restaurant itself – a place that aims to bring back the roots of dining and celebrate the gathering of loved ones; the sharing of stories and memories over great food and drink. Though this overseas location will encapsulate the same spirit of the original concept in Stockholm, The Flying Elk HK’s menu will be unique to its location. In keeping with The Flying Elk’s mission to offer tasty food with the best and true ingredients, Chef Björn has utilised both local and Nordic suppliers to create dishes such as Halibut paired with a sherry & beurre noisette hollandaise, pork belly, broccoli and hazelnut;Roasted Elk Sirloin, served with Frantzén “hot sauce”, bitter salad and jus roti; Umami Salad with duck confit, shiitake, smoked pecorino, crispy onions and umami dressing; and Grilled Beef Short Ribs & Ox Heart, made with horseradish, celeriac remoulade and pickled mustard seeds. For dessert, Chef Björn has put a seasonal twist on his “Marängsviss” – otherwise known as “Eton Mess” – with blueberries, lemon thyme, and rye. Through his gastronomic expression, Chef Frantzén brings a one-of-a-kind dining experience to the local community in Hong Kong, and takes guests on a journey through Sweden with his elevated take on rustic Nordic cuisine.
Björn Frantzén represents the young generation of successful chefs who are completely devoted to their calling. Björn’s passion and dedication eventually brought him to work in critically acclaimed restaurants like Raymond Blanc’s two Michelin-starred Le Manoir aux Quat’Saisons in the United Kingdom, and Alain Passard’s three Michelin-starred restaurant L’Arpège in Paris.
Now, Björn has become one of the most renowned chefs in Sweden and the world. Through his own collective of restaurants, he has shaped a unique vision of Nordic cuisine, combining sublime ingredients with astounding culinary techniques. His contemporary European restaurant Frantzén is one of the only three restaurants in the Nordic countries to hold the highly coveted three Michelin stars in the MICHELIN Guide 2018. Eager to bring his take on Nordic cuisine to the rest of the world, Björn sees an unrivalled passion for food within the Hong Kong community and hopes to continue challenging and exciting local palates with his new ventures and some of his favorite food served at The Flying Elk.
