Executive Chef Carlos Salvador Asensio bringing a new a la carte menu featuring additional authentic dishes
Two of Barcelona’s most social media influenced young chefs are treating Hong Kong foodies to a summer showcase of revered cuisine from the world’s Michelin-star capital at Hong Kong’s popular traditional Spanish taverna Rustico at dynamic Lai Chi Kok dining destination D2 Place. Guest chefs Jérôme Quilbeuf and Miquel Antoja – both protégés of legendary Michelin-starred Catalan Chef Carme Ruscalleda, are presenting the one-off culinary discovery themed ‘Menú From Barcelona’ over the last three weeks in June.
The highlight is a 4-hands, seven-course tasting dinner menu – ‘Journey through modern Spanish cuisine’, showcasing their gastronomy inspired by Asia’s unique culinary culture from their ultra-hip restaurants – Nonna Maria and 130 Restaurant in Barcelona, transforming Rustico into a fine dining mecca from 11-14 June 2018.
Chef Jérôme and Miquel’s ‘Modern Spanish Set Dinner’, priced HK$980 per person from 11-14 June, starts with appetisers of Truffled Iberian Ham Croquettes; Sea Bream Ceviche with Strawberries, Sweetcorn and Pumpkin; and a mini version of their signature Mini “Pizza Paella” in NONNA MARIA Style, combo of seafood paella on a pizza base, playfully served in a mini pizza box, which is also available for take away option.
First course on the ‘journey’ is a salad of Hearts of Lettuce and ROMESCO, followed by Duck Consomme With Foie Gras, Kombu Seaweed and Plums; Fresh Scallop in Shell, Mashed Potato,; and Juicy Red Prawn Rice, flavoured with Saffron Aioli and Chervil Juice.
Main course is Braised Beef Cheek, Sweet and Sour Pedro Ximenez with Apple Coca.
Two decadent desserts are introduced by Blanc Almond Manger with Mediterranean Sea Water Ice Cream, and a luscious grand finale titled ‘Textures of Chocolate, BARCELONA 2018’.
From 15 – 25 June, Rustico will return to its rustic, farmhouse roots to showcase the celebrity chefs’ stylish tapas and astonishing dessert specialties.
The ‘Mordern Spanish Set Tapas Menu’, showcases ten of the trendiest tapas in Barcelona, including the signature Mini “Pizza Paella” in NONNA MARIA Style (HK$118), Truffled Iberian Ham Croquettes (HK$25), Heart of Lettuce and Romesco Sauce (HK$108) featured on the dinner menu – along with Red Prawns Tartare with Fresh Strawberries (HK$108); Smoked Sardine Coca and Iberian Pancetta (HK$98); traditional favourite Spicy Potato Bravísima (HK$78); Japanese-inspired Okonomiyaki Spanish Tortilla (HK$88); Home-made Banana Macho Chips, Board Beans Guacamole (HK$88); Octopus Galician Style in Cannelloni (HK$118); and Citrus Ceviche Marinated in Cocktail Glass (HK$108).
On the not-to-be-missed ‘Mordern Spanish Set Dessert Menu’, including their trademark Pina Colada (HK$70), Guanaja Chocolate Ganache with Spanish Black Olive Stracciatella (HK$70); Red Fruits Meringue (HK$70); and the twin deserts on the fine dining menu : Blanc Almond Manger, Mediterranean Sea Water Ice Cream (HK$78) and Chocolate Textures, Barcelona 2018 (HK$78).
Miguel Antoja has shot fame as a celebrity chef on social media with over 329k followers, and restaurant consultant since training as a Master in Pastry and rising to sous chef helming Carme Ruscalleda’s eponymous 3-Michelin starred Sant Pau in Sant Pol de Mar restaurants in Barcelona.
Sant Pol de Mar is the name of village where the Restaurant Sant Pau is located.
Jérôme Quilbeuf, originally from Paris, is a fellow protégé of the world’s most accomplished female chef in Barcelona, who also led her overseas Sant Pau Tokyo restaurant in Tokyo to 2 Michelin stars, becoming Japan’s youngest Michelin-starred chef in 2007. He first hit the headlines by winning Catalonia’s ‘Best Young Chef’ prize in 2001. He is also the owner of Nonna Maria, famed for both mordern Spanish specialties and gourmet pizzas with a 4.5 stars ranking TripAdvisor; and menu consultant to 130 Restaurant, renowned for high-end international fine dining.

New ‘comfort food’ tapas specialties include Jet Fresh US Manila Clams in Basil Green Sauce (HK$138); Fresh Mussels, Tomato and Aromatic Herb Sauce (HK$118) and Deep Fried Chicken and Iberian Ham Creamy Croquettes (HK$65).
New middle and main courses include Deep Fried Spanish Cod Fritters with Honey Form (HK$88), Catalonia Style Whole Fresh Crab Juicy Rice (HK$388); Traditional Spanish Cold Soup with Peppers, Iberian Ham, Boiled Egg & Croutons (HK$88); “Cecina de León” Cured Spanish Beef Salad with Creamy Burrata Cheese and Strawberries (HK$148); Pan Seared Spanish Sea Cucumber with Creamy Potato & Crispy Artichokes (HK$258); “RUSTICO” Traditional Fish Soup with Assorted Fresh Seafood (HK$128); and Pan Seared Octopus leg “a la Gallega” with Crunchy (HK$168).
Ever-popular signature dishes remaining on the new menu due to popularity among diners include Spanish Style Beef Tripe Stew with Chick Peas (HK$158), Rustico Broken Egg with Crispy Potatoes & Spicy Spanish Chorizo (HK$98), plus desserts.
Chef Carlos’s modern Barcelona cuisine’ is traditional with a contemporary twist, honed at Moments restaurant at the Mandarin Oriental in Barcelona under celebrated multi-Michelin star head chef Carme Ruscalleda.
Rustico is named after its traditional rustic Spanish taverna décor modelled after typical Catalan restaurants – complete with wooden beams, an open kitchen with hanging jambon, pots and pans, and red brick/tile mosaic flooring. In true ‘taverna’ style, the intimate venue even incorporates semi-outdoor al fresco seating under grapevines.
Occupying 2,000 sq ft and 80 seatings, Rustico serves authentic Spanish tapas in a relaxed and elegant setting that is distinctly modern with covert Spanish accents. The open kitchen invites diners to interact with the kitchen and observe Chef Carlos Salvador Asensio’s culinary skills.
