Mono Summer with Dynamic Latin=American Menu

Featuring Vibrant Seasonal Ingredients

Summer in is in the air at MONO,

Asia’s window into refined Latin American gastronomic culture and the one MICHELIN-starred restaurant ranked 41st on the Asia’s 50 Best Restaurants 2023 list. With MONO’s new
seasonal menu, guests can expect to experience the intricacies and delights of Latin American cuisine, all while indulging in ingredients synonymous with summer: lobster, blue crab, fresh tomatoes, and more.

Inspired by Chef Ricardo Chaneton’s culinary journey from Venezuela to France and Hong Kong, the carefully curated spread marries traditional Latin American
cuisine with innovative recipes while experimenting with contemporary and classic techniques.

Lunch highlights include: Pacific seabass topped with nopal (prickly pear cactus) and a creamy Caribbean curry; escargot tamal accompanied by a tangy and sweet tamarillo salsa; blue crab crowned with San Marzano tomatoes
and Napolean cherries; and MONO’s signature Danish imperial langoustine featuring fresh Ecuadorian cacao.

Dinner highlights include: purple corn Mexican infladita stuffed with Ebisu oyster and chayote squash;
Ossetra caviar paired with Peruvian ajiamarilllo and Kalamata olives; Brittany monkfish served with Andean cereals stew; veal sweetbread topped with jicama and Mexican mole made from 21 ingredients; and Taiwanese organic cacao fruit to round out the meal.

Since its opening in December 2019, MONO has relentlessly sought to distil Latin America’s complex culinary culture and ambition by way of Chaneton’s mastery of fine dining. The restaurant’s commitment to honouring the region is evident in its sourcing of plateware that pays homage to Latin American pottery and highlights the beauty of the continent’s coastline and mountains. Looking ahead, MONO remains even more committed to driving education in the dining room, taking guests on a journey of discovery about Latin America’s gastronomic culture.
