Brittany blue lobsters are regarded as one of the best seafood from France. They are prized by not only its beautiful dark blue shell, but also its delicate sweetness, rich in flavor and the tender texture. From June to August, Australia’s winter black truffles are in season and they’re noted for their deep blackness and strong aroma.
Chef Claudio, Chef de Cuisine of Sabatini prepares a selection of dishes including appetizer, pasta and main dishes. Highlights include Catalana Style Blue Lobster Salad from Brittany with Italian Oscietra Caviar – lobster meat is lightly poached and dressed with red onions flavored extra virgin olive oil. The dish is succulent, rich in flavour and refreshing, making it the best to enjoy this summer. Sabatini Style Blue Lobster served with Risotto is made with homemade seafood tomato sauce. The risotto is flavorsome and bursting with the essence of seafood. Blue Lobster Bisque with Bread Crôuton and Sour Cream is lusciously rich and creamy loaded with buttery lobster.
Slow-Cooked Organic Japanese Egg Served with Mushrooms, Potatoes and Australian Black Truffle – the delicate and soft egg topped with freshly shaved black truffle. The truffle works incredibly well with its rich, earthy flavour. Recommended by Chef Claudio, Homemade Ravioli Stuffed with Wagyu Beef Cheek Served with Australian Black Truffle and Pan-Seared Duck Liver – the thin handmade ravioli stuffed with juicy beef cheek. The shavings of black truffle adds an earthy and packed full of flavour.
