Introducing Honjo’s New Omakase Menu

Honjo is proud to present its brand-new omakase dining experience, a bold and imaginative exploration of Japanese cuisine led by Executive Chef Sandro Medrano Montero. Inspired by Chef Sandro’s global culinary journeys and the vibrant flavours of summer, this exclusive omakase journey promises to be an unforgettable encounter with artistry, storytelling, and flavour.

Launching on 19 May, the Honjo omakase will be available only on Mondays, Tuesdays, and Wednesdays, hosted in the intimate privacy of the Blue Suite, with just eight seats available per evening. Each experience is priced at HK$980 per guest, with an optional wine pairing at HK$398.

The menu includes:

  • Five appetizers

  • Two sushi selections

  • Five main courses

  • One exquisite dessert

Omakase, meaning “to entrust,” offers a personal and immersive experience that reflects a chef’s mastery and philosophy. At Honjo, this philosophy is rooted in traditional Japanese technique and infused with international flavours, reflecting the modern global gourmand’s palate.

Highlights of the menu include:

  • Coral: A briny seaweed salad with lotus root karaage, ikura, yuzu, and truffle

  • Salmon Tataki: Lightly seared and paired with mango chutney and a medley of condiments

  • Scallop with Ponzu Jelly and Red Chilli: Silky raw scallop elevated with spice and citrus

  • Grilled Oyster with miso glace and shiso dressing

  • Beef Skewer glazed with gochujang and karashi mustard

  • Aburi Wagyu Sushi on truffle rice cooked on a hot stone

  • Spicy Tuna wrapped in avocado with chukka wakame and ikura

  • Abalone with Barley and Tofu Purée

  • Bamboo: Tempura crab wrapped in bamboo leaf, with spicy mayo and black tobiko

  • Pork Belly “Sando” with spinach and daikon sunomono

  • Roast Chicken with crisp skin, shiso mayo and Yakimeshi rice with onsen egg, prosciutto, and gold leaf

  • Matcha Dessert: A finale of sponge cake, Bailey’s cream, cookies, and matcha ice cream
