Chef Bruno Jeong Unveils Mosu Hong Kong’s Exquisite Summer Creations

Mosu Hong Kong, the sole sister outpost of the three-Michelin-starred Mosu Seoul helmed by Founder and Executive Chef Sung Anh and led in the kitchen by Head Chef Bruno Jeong,  guests are invited on an elevated culinary journey featuring a series of innovative creations. This summer, inspired by Chef Bruno’s personal culinary experiences and the local ingredients he discovered in this city, he unveils an array of dishes that seamlessly fuse Korean cuisine with Hong Kong’s seasonal produce.

Olive & Doenjang Tart, the new small bites item, carefully selected Kalamata olives, prized for their complex and smoky flavour. The tart is filled with a harmonious blend of rich olive oil jam and Korean soybean paste (Doenjang), two distinct yet complementary ingredients that create a surprising and sophisticated flavor profile. finished with a delicate garnish of sliced Kalamata olives.

Jeju Pork, Anchovy, Pineapple, available in our lunch menu, features the finest

Jeju Island pork, renowned for its tender and succulent texture. Harmoniously paired

with a house-made salted anchovy (Myeolchi-jeot) sauce, a popular Korean dipping

sauce for grilled pork, crafted with anchovies from Jeju island, green chili, garlic, and

chili flakes. Beautifully complemented by lightly charcoal-grilled pineapple infused

with marigold, offering a perfect balance of flavors.

Gosari Caster Iron Pot Rice, soon to be available at Mosu Hong Kong, Gosari (fernbrake) is common in traditional Korean side dishes. Chef Bruno masterfully cooks the Gosari with soy sauce and rice in an iron pot, creating a uniquely flavorful and aromatic rice. Served alongside chadolbagi (beef brisket) and complemented by Korean banchan small dishes, tomato kimchi and pickled wild garlic leaf.
