The St. Regis Singapore To Host Marriott International’s Luxury Dining Series 2025
A multi-sensory celebration of forgotten flavours from 29 to 31 August 2025
Singapore – This August, The St. Regis Singapore will welcome Marriott International’s Luxury Dining Series 2025, part of a multi-city regional culinary showcase taking place from July to September across Asia Pacific. Joining an illustrious line-up of luxury hotels — including The St. Regis Osaka, JW Marriott Jeju Resort & Spa, JW Marriott Bengaluru Prestige Golfshire Resort & Spa, The Ritz-Carlton, Perth, The St. Regis Jakarta, and The Ritz-Carlton, Bangkok — the Singapore edition will present a curated programme of culinary experiences celebrating the revival of forgotten flavours and traditions, reinterpreted by acclaimed chefs and mixologists.
Across four signature venues — Yan Ting, The Astor Grill, The Tea Room, and the soon-to-debut St. Regis Bar Singapore — guests will be invited on a multi-sensory journey through storied ingredients and heritage techniques, reimagined with contemporary flair.

An Imperial 4-Hands Encounter at Yan Ting
Executive Chinese Chef Chan Chung Shing of Yan Ting will collaborate with Chef Daniel Wong of the One MICHELIN-starred Jin Xuan at The Ritz-Carlton Shanghai, Pudong for a four-hands lunch and dinner (29–30 August). Dishes include the Shunde Crispy Golden Gold Coin Crab Cake, inspired by a traditional chicken liver delicacy, and the White Pepper Chicken Soup with Pork Tripe and Fish Maw, a Qing Dynasty recipe beloved for its nourishing qualities. A special Dim Sum Brunch (31 August) will feature creations such as Phoenix Tail Prawn Toast with Caviar and Simmered Thai Pomelo Skin with Shrimp Mousse.
Singapore’s Diamond Jubilee Afternoon Tea at The Tea Room
Executive Pastry Chef Ng Chee Leong and Asia’s Best Pastry Chef 2021 Angela Lai will present a locally inspired afternoon tea (29–31 August) that reimagines beloved Singaporean flavours. Guests can enjoy unlimited Buah Keluak Scones, Rojak Kueh Pie Tee with Mango Pearls, and Coconut Macarons with Gula Melaka Ganache, served in The Tea Room’s lush summer garden setting.
Asia’s 50 Best Bars Takeover at The St. Regis Bar Singapore
In a special preview ahead of its official opening, the St. Regis Bar Singapore will host a takeover by Paulo Naranjo of The St. Regis Jakarta (No. 22, Asia’s 50 Best Bars 2025) and Marco Dognini of W Bangkok’s Bar Sathorn (No. 48). Together with the hotel’s own mixologists, they will craft cocktails inspired by forgotten flavours and time-honoured techniques.

A Contemporary Italian-Portuguese Showcase at The Astor Grill
A six-hands dinner (29–30 August) will unite Chef Vladmir Veiga of One MICHELIN-starred LAB by Sergi Arola, Executive Chef Fabio Granata of The St. Regis Singapore, and Chef de Cuisine Angelo Sergio of The Astor Grill. Highlights include Carabineiro Prawns with Veal Sweetbreads enhanced with Madeira wine, Cod Fish “Trippette” with white corn polenta, and a refined Zuppa Inglese. On 31 August, The Astor Grill will close the weekend with a lively Sunday Brunch, complete with a paella-style Lobster Rice, champagne sabrage, live jazz, and a Bloody Mary bar.
