Kansai One’s dedication to quality is demonstrated through its meticulous sourcing of ingredients. The restaurant exclusively uses “A5” Wagyu, the highest grade certified by the Japan Meat Grading Association (JMGA). This grade signifies not only the superior yield rate (A-grade) but also the pinnacle of meat quality (5-grade). Its excellent Marbling Standard (BMS), meat color, fat color, and firmness all meet the highest criteria, establishing its extraordinary quality.

Finest Selection: Kagoshima “Satsuma Gyu” – The Hidden Gem of Wagyu

To present the ultimate Wagyu experience, Kansai One specially features Kagoshima “Satsuma Gyu” (Satsuma Wagyu), renowned as a “hidden, rare Japanese Wagyu.” Satsuma Gyu is the first Wagyu brand permitted to be named after Kagoshima’s ancient name. It is reared by Kamichiku Farm, Japan’s largest Wagyu ranch, in the majestic natural environment at the foot of Sakurajima Volcano. The cattle’s feed is enhanced with shochu lees, a local Kagoshima specialty, ensuring an Oleic Acid content exceeding 55%. This contributes to its exceptional aroma and flavour. Each slice of Satsuma Gyu boasts incredible tenderness, a low melting point for the fat, melting seamlessly in the mouth, and rich juices, perfectly embodying the essence of A5 Wagyu.

Three Wagyu Sets: Exploring the Unique Flavours of Different Cuts

Kansai One offers three A5 Wagyu sukiyaki set meals featuring different cuts, allowing diners to choose according to their preferences and palate.

The leaner “Premium A5 Akami Sukiyaki Set” (HK$228/120g; HK$258/180g) features the shoulder clod, a cut located near the foreleg. This portion is specifically chosen by the restaurant team for its firm yet elastic texture, offering the rich flavour characteristic of akami while maintaining the delicate tenderness of A5 Wagyu. As the fat melts in the mouth, it releases a natural sweetness and rich aroma, resulting in a rich yet non-greasy flavour profile that is truly memorable.

The “Selected A5 Short Plate Sukiyaki Set” (HK$258/120g; HK$298/180g) showcases the highly prized Chuck Short Rib (Triangular Short Rib), a rare cut with only two portions available per cattle, achieving the golden ratio of fat and meat texture. Its net-like marbling is evenly distributed within the muscle fibres, creating a complex layering of textures and a rich, fragrant meat flavour, making it ideal for guests who seek a balance of mouthfeel and rich fat content.

The “Supreme A5 Ribeye Sukiyaki Set” (HK$298/120g; HK$348/180g) showcases the artistry of marbling, sourced from the ribeye. Its fat distribution is flawless, resembling a marble pattern. A quick swish in the pot releases the rich fat aroma onto the tongue. The meat is exquisitely tender, providing a dreamy experience like fresh snow melting, guaranteed to be unforgettable.

In addition to the three regular sets, the restaurant also introduces a “Limited Kuroge Wagyu Flat Iron Sukiyaki Set” (HK$278/120g; HK$318/180g). The Flat Iron is a rare cut, making up only 1% of the cattle, featuring a delicate tendon in the middle. The meat is tender, with fine muscle texture and a refreshing bite, allowing guests to taste both the rich beef flavour and the Wagyu fat aroma. Limited to 18 portions daily, available while stocks last.

All sukiyaki sets include two exquisite appetisers, a seasonal vegetable platter, Japanese rice or Sanuki Udon, and conclude with a Japanese dessert.

Beyond Ran-O: The Essential Top-Grade Japanese “Yume-O Egg”

Many Hong Kong food lovers are familiar with the rich flavour of the Ran-O egg. However, in the world of premium Japanese eggs, there is one that surpasses it: the Yume-O Egg (Dream King Egg). Sourced from Hyogo Prefecture, the Yume-O Egg owes its top quality to the natural and nutrient-rich feed given to the chickens. It has won multiple championships at Japan’s “Raw Egg over Rice Festival” and is certified as Japan’s highest-grade egg for raw consumption. The Yume-O Egg features a vibrant orange-red yolk, and compared to the Ran-O egg commonly found in the market, it boasts a richer aroma and a smoother texture.
