Harvested in the foothills of the Piedmont region, Alba white truffle boasts an irresistible aroma which makes it a sought-after ingredient in the kitchen worldwide. Treat yourself to the tantalising specialties prepared with this extravagant fungus, such as white onion risotto with parmesan shavings and romaine lettuce, scrambled organic French eggs with crouton and fine herbs or homemade tagliolini pasta, sautéed chanterelle mushrooms and watercress, where the white truffle’s unique and sublime flavour match with risotto, eggs and pasta perfectly. In addition, diners may also add white truffle to complement any desired dish on the a la carte menu.
Aside from Alba white truffle, wild game is also in season in Europe. Hugo’s will introduce various wild game specialties including braised French wild boar and roasted French Red Leg partridge breast in November, as well as peppered loin of Welsh wild fallow deer and roasted breast of pheasant in December to satisfy your cravings for special wintery flavours.
