The evening begins with the Kagoshima Hamachi Crudo, where lime zest and blood orange jus brighten each delicate slice, elevated by the aromatic depth of shallot oil. Entrées follow with both the beautifully charred Grilled Spanish Octopus with smoky romesco sauce and the Lobster Risotto, enriched with silky mascarpone and fragrant lobster dashi. The Hillside Charcoal Grilled Striploin arrives perfectly seared and brushed with a lustrous black cherry gastrique, a sublime balance of savory and sweet. For the grand finale, the Citrus Tart with toasted meringue provides a refreshing burst of sunshine to end on a bright note.

Swim Club: Where Sweets Steal Hearts

Swim Club sparks the evening with signature cocktails: the Velvet Candy (HK$158), where blended Scotch mingles with passionfruit and strawberry water, served with a whimsical lollipop; and Two to Tango (HK$158), a playful fusion of rum, clarified strawberry horchata, vanilla, and raspberry caviar, a drink that captures the dance of romance.

Tantalizing bites include Hamachi Ceviche (HK$218) with blue salt and basil oil, or the heart-shaped Wagyu Beef Tostada (HK$198), rich in spice and charm. UnctuousCalifornian Oysters (HK$250), paired with roja aioli and vinegar cucumber, can be enhanced further with the luxurious addition of Kaviari Oscietre Prestige Caviar(+HK$400). The Garlic Tiger Prawns (HK$198) take center stage, kissed with honey and cayenne, balancing sweetness and heat in a flirtatious embrace that pairs beautifully with freshly shaved Winter Black Truffle (+HK$120).

Swim Club Valentine’s Day Dessert Special Powered by Messina

What’s Valentine’s Day without a little bit of sugar? The Banana Split (HK$138) gets a tropical twist courtesy of Gelato Messina. Beloved for its freshly churned and unique flavors, the gelato giant is well known for growing their own and making all of their products from scratch daily. Grab your Valentine and two spoons to split a brûléed banana with scoops of Messina’s creamy Coconut & Lychee gelato, Super Dulce de Leche gelato, and Strawberry Sorbet, topped with shaved chocolate and coconut Chantilly. Or opt for a quintessential first date dessert with a Skillet Cookie (HK$148). A freshly baked, gooey, and golden chocolate chip cookie is topped with an ice-cold scoop of Messina’s classic Vanilla gelato and finished with a generous drizzle of chocolate sauce, perfect for sharing or self-indulgence.
