As the nights close in and the weather cools, this comforting, rum-based aromatic cocktail will remind guests of the scents of Christmas markets and festive feasts, and is available until the end of the December. The Blazer cocktail has an illustrious history and is world renowned for its fabulous fiery flair upon presentation. boujis has adapted the original recipe to add Christmas elements to the mix, including delicious and smooth 23 year aged Zacapa Rum in place of brandy, which boasts sweet and nutty elements on the nose with hints of honey, chocolate, and smokiness on the end. Other ingredients include 50mls of Zacapa 23 year old Rum, 1 cinnamon stick, 3 cloves, 1 bay leaf, 1 star anise, the zest of 1 large orange, the zest of 1 large lemon and 2 drops of boujis-homemade chocolate bitters.
To make this festive cocktail, Suva fills a rock glass half full of boiling water and places the brandy balloon filled with the rum and bitters and on its side atop of the glass. He puts a flame to the rum and begins to put all ingredients into the glass, spraying the oils from the orange and lemon zests to coat the inner glass before placing in the mix of spices and zest inside, continuously turning the glass to allow the rum to soak up all of the flavors. After one more turn of the glass, he places a surface atop the opening of the glass to extinguish the flame before pouring the ingredients through a sieve into a room temperature brandy balloon and the cocktail is ready to be served.
