Chef CJ and Vivant’s Chef Jeston Chua are joining forces to present a One-night-only Boodle Fight (HK$770 p.p) on Wednesday 10 July.
The menu, served entirely on banana leaves, will present an elevated take on a sharing-style Filipino meal traditionally enjoyed by Philippines army cadets. The camaraderie-building dining experience, during which guests eat using only their hands, has since become an iconic culinary practice in the archipelago nation.
A selection of magnums of grower Champagne will be popped for the occasion. Guests can opt-in for exceptional pours like the golden, creamy and decadent J. Lassalle by the glass as well as several others. The hand-picked Champagnes promise to both complement the elevated Filipino dishes and contrast with the casual format of the evening.
Available for parties of two to eight, each Brut! x Vivant Boodle Fight guests will enjoy three starter dishes: Adobo Wontons with Adobo Dip, Pork Skewers and Roasted Vegetable Rolls, all served alongside piquant pickled green papaya.
Up next are three abundant main dishes of Fish Roulade with Green Mango Salad Rolls, an elevated take on the classic side dish, made with a shrimp paste vinaigrette and wrapped in fragrant shiso leaves. Grilled Half Chicken and flavorful Garlic Rice with vibrant Annato Oil complete the main part of the meal.
Concluding the feast, guests will be treated to a generous serving of Bibingka, a traditional sweetened Filipino rice cake with salted duck egg and cheese.
