Chef Chan Wai Keung, the executive chef of the three-Michelin-starred Yan Toh Heen restaurant at the InterContinental Hong Kong, has been invited to showcase his culinary skills at the Michelin Guide Hong Kong Macau 2023 gala dinner

Taipei’s three-star Michelin restaurant, Imperial Palace, has once again been invited to participate in the Hong Kong and Macau Michelin Guide 2023 ceremony. Executive Chef Chan Wai Keung, who has won the three-star Michelin rating five times, will collaborate with six world-renowned chefs to showcase their culinary skills and pay tribute to Hong Kong. They will prepare an eight-course dinner, and Chef Chan’s contribution will be the second appetizer, “Hundred Flowers Wagyu Beef Coffee Roll,” which uses Nespresso coffee to pay homage to his hometown.

Chef Chan Wai Keung began his culinary career in Hong Kong at the age of 12 and has since become known for his Cantonese cuisine. He has a deep emotional connection to his hometown and draws inspiration from his childhood memories and early culinary experiences. For the Hong Kong and Macau Michelin Guide 2023 ceremony, he and his team from the Imperial Palace restaurant have carefully designed the second appetizer, “Hundred Flowers Wagyu Beef Coffee Roll.” The dish uses Nespresso Peru Organic coffee to create a unique flavor combination with the A5 Wagyu beef, which is cooked in a coffee marinade with fruit and herbal notes, resulting in a rich and savory taste. To balance the rich flavors of the beef, it is wrapped in shrimp paste and fried with vermicelli to add a crispy texture.

Hong Kong and Macau are the second Asian cities, after Japan, to be included in the Michelin Guide selection. The event will feature a modern Chinese decor at the five-star hotel, Wynn Palace Cotai, and will be attended by renowned chefs, culinary experts, and food critics. Chef Chan Wai Keung’s dish will be one of the highlights of the evening, demonstrating his creativity and skill as a three-star Michelin chef.
