Chef Daniel Boulud Opens Terrace Boulud in Hong Kong
Hong Kong – This March, Daniel Boulud arrives in Hong Kong with Terrace Boulud, a contemporary French brasserie set high above Central at Landmark Prince’s.
Created in partnership with Mandarin Oriental, Hong Kong, Terrace Boulud reflects Boulud’s lifelong pursuit of elevating the French brasserie experience, bringing together his global culinary journey and Hong Kong’s dining culture to create something unique. The restaurant also marks Mandarin Oriental, Hong Kong’s first dining concept located outside the hotel itself, extending its hospitality into the fabric of Central. Designed to be part of Hong Kong’s social rhythm, the restaurant moves easily from long lunches to evening aperitifs and nights that stretch comfortably into the skyline.
Raised near Lyon, widely regarded as the gastronomic capital of France, Boulud has spent more than four decades building one of the world’s most influential restaurant groups, with MICHELIN-starred kitchens across New York and internationally, and honours including multiple James Beard Awards and the Lifetime Achievement Award from The World’s 50 Best Restaurants.
“As a chef, I have always been inspired by the dialogue between cultures,” says Boulud. “Hong Kong is one of the rare cities where tradition and modernity exist side by side, not as contrast, but as conversation. Terrace Boulud is our way of bringing French brasserie culture into that dialogue.”
At Terrace Boulud, the menu follows the philosophy that has guided Boulud throughout his career, organised around four culinary muses: La Tradition, La Saison, Le Potager, and Le Voyage. Together they reflect French culinary heritage, seasonality, an appreciation for vegetables and produce, and global influences shaped by travel and discovery.

Hong Kong itself becomes a fifth muse through DB x MO Dim Sum, a collaboration that places French technique in conversation with Cantonese culinary tradition. Hong Kong, shrimp dumplings with ginger and scallion XO dip sit alongside Lyon, pig trotter and truffle soup dumplings inspired by Lyonnais flavours, while New York, pastrami cabbage & sweet mustard bao nods to New York, reflecting the layered journey behind the cuisine.
Across the menu, classic brasserie dishes anchor the cooking: Pâté En Croûte, Vol-Au-Vent, Poulet, and seafood from the raw bar and grill. The cooking remains seasonal and precise, guided by technique and respect for ingredients.
Leading the kitchen in Hong Kong is Executive Chef Aurélie Altemaire, who works closely with Chef Daniel Boulud to bring the restaurant’s culinary vision to life. Her career spans MICHELIN starred kitchens in Paris, Epicure at Le Bristol, and a decade with Joël Robuchon in London.
Beyond the kitchen, Terrace Boulud brings together Daniel Boulud’s signature brasserie hospitality with Mandarin Oriental, Hong Kong’s legendary service, creating an experience that feels both polished and effortless from lunch through late evening.
At Terrace Boulud, the beverage programme stands alongside the cuisine as a defining part of the experience, reflecting the art of French dining where the table and the bar exist in equal harmony. Rooted in French wine culture and shaped by contemporary mixology, the programme balances credibility, discovery, and sociability throughout the day and evening.

The wine list features more than 300 references anchored in France’s great regions, with Champagne at its core and wines by the glass poured from magnums to enhance both quality and occasion. Cocktails reinterpret classic structures through Asian flavours, seasonal ingredients, and modern technique, reflecting Hong Kong as the restaurant’s fifth muse and reinforcing the terrace and central bar as social anchors of the experience.
Designed by Malherbe Paris, the restaurant draws inspiration from the golden age of travel and Chef Boulud’s journey across continents. The space unfolds from arrival to bar to dining room to rooftop terrace, anchored by a sculptural green onyx bar and framed by shifting digital landscapes inspired by train windows in motion.

The terrace and central bar are essential to the experience at Terrace Boulud, reflecting the French art de vivre where the pleasure of the table, the bar, and the company around them shape the rhythm of the day. From leisurely lunches and afternoon tea to aperitifs and evening dining, the restaurant moves naturally from day into night, with DJs and live performers shaping the atmosphere as the city skyline comes alive.
