CHEF SUN KIM OF META AND CHEF RICARDO CHANETON OF MONO COME TOGETHER FOR A TWO-DAY COLLABORATION THIS SUMMER
The two award-winning chefs explore the culinary synergy of their cultural heritage through a unique fusion Latin American and Korean dining experience
On June 16th and 17th, Chef Ricardo Chaneton of MONO, the one MICHELIN-starred restaurant and 41st on the Asia’s 50 Best Restaurants 2023 list, and Chef Sun Kim of Meta, a Singapore-based one Michelin-starred restaurant that came 17th on Asia’s 50 Best Restaurants 2023 ranking, will join forcesfor the latest MONO Unplugged.

Taking place every few months, MONO Unplugged is MONO’s fun alter-ego night, born from a desire to step away from the restaurant’s typical service and showcase a warmer, more playful side to Latin American hospitality. The ‘unrestrained’ affair this June will showcase a bespoke multi-course tasting menu co-created by the two award-winning chefs, highlighting their culinary synergy and celebrating their respective Latin American and Korean backgrounds.
“I’m really excited to work with Chef Sun, as we share similarities in our French culinary training and cooking philosophy – the dishes we make at our restaurants are honest, authentic, and focused on highlighting the natural flavours and textures of each ingredient – but there is a lot to learn from him too as I’ve not had much experience cooking Korean food before. Collaborations like this are a great opportunity to exchange knowledge, but also to create something truly special and have fun along the way,” says Ricardo.

Chef Sun Kim was originally born in Busan, Korea. His role as chef is a culmination of a decade of experience, starting from working in classic Italian restaurants in Seoul. After spending time at both Tetsuya’s and Waku Ghin, he learnt Japanese techniques, which was essential to shaping how he now helms the kitchen at Meta. At Meta, he has been dedicated to creating dishes that showcase innovative and well-balanced dishes based on his Korean heritage, travel and culinary experiences.

“Coming to cook with Chef Ricardo at MONO is an incredible chance to showcase the diversity of Korean cuisine and highlight the similarities and differences between Latin American and Korean cuisine. For example, both Latin American and Korean cuisine are well known for their bold and robust flavours, but those flavours are very different. We can’t wait to share our recreations of our hometown flavours with guests,” Sun adds.
MONO Unplugged x Meta will take place on 16 & 17 June and will be open to the public for lunch and dinner. The lunch menu priced at HK$ 1788 per person whilst the dinner menu is priced at HK$2888 per person (subject to 10% service charge).
