Cornerstone Introduces Seasonal Menu Change & Weekday Set Dinner
CORNERSTONE INTRODUCES SEASONAL MENU CHANGE & WEEKDAY SET DINNER
Cornerstone, the contemporary Australian bistro from The Arcane Collective, led by Head Chef Neal Ledesma, is introducing a series of seasonally inspired dishes to the a la carte menu, as well as introducing a new early-week night Set Dinner menu. Staying true to the core ethos of the bistro, each new dish is centred around quality seasonal produce, simple and bold flavours, prepared to highlight the natural attributes of each ingredient.
In step with the turn of seasons and cooler temperatures, Chef Neal has introduced a collection of comforting seasonal dishes to Cornerstone’s a la carte menu. The new dishes include a Beetroot & Carrot salad, with white bean hummus, endive, walnut, filo, celery (HK $158), the perfect transitional dish for Hong Kong’s still warm yet on the precipice of cooler climes, a medley of different textures, earthy and sweet root vegetables, accompanied by the nutty flavour of white bean hummus. For a satisfying main course, a Mushroom Risotto, with girolles, morels, lemonmascarpone (HK $208), an indulgent vegetarian dish with buttery flavours and a balance of tang from the addition of lemon mascarpone.
A mainstay on the Cornerstone menu since opening, Chef Neal has created a new iteration of their signature Grilled Octopus (HK $268) for the cooler seasons, made with sustainably sourced octopus from South Australia, paired with spiced chickpeas and house-made preserved lemon mayonnaise and a winter leaf salad of radish and frisée. Also new to the menu is a beautiful autumn inspired dish of Sagabuta Pork Loin Shiitake Boudin (HK $278), cooked at medium heat to preserve the delicate meat flavour, served with creamy mustard mash potato, chestnuts, and burnt apple chutney for a touch of acidity. To finish on a high note with a satisfying creamy and refreshing dessert that literally melts in your mouth, there is a delectable Milk Chocolate Mousse hazelnut dacquoise, with vanilla Chantilly (HK $108).
As well as the new additions to the a la carte offering, Cornerstone has also introduced a new weekday Set Dinner menu, available from Monday to Wednesday every week. Priced at HK $488pp, the menu offers four courses with an optional wine pairing for HK $288pp. Beginning with the signature Cornerstone dish of Japanese Cherry Tomatoes with avocado, aubergine, Stracciatella and crouton, the set is followed another seasonal starter and a weekly-rotating main course such as Braised Wagyu Beef Cheek served with mustard mash, maitake, pearl onion and swiss chard, and a dessert. The set dinner menu is another opportunity for Cornerstone to showcase the very best produce born from carefully nurtured relationships with key suppliers and farmers, both local and international.
The seasonal dishes are priced between HK $108 and HK $278 and are available at Cornerstone now. The set dinner menu is available from Monday to Wednesday every week, for HK $488pp and an optional wine-pairing for an additional HK $288pp.
