Dynasty Restaurant Unveils “Cantonese Rhythm, Urban Reverie” — A Contemporary Celebration of Cantonese Cuisine

Hong Kong’s award-winning Dynasty Restaurant at Renaissance Harbour View Hotel Hong Kong invites discerning diners on an extraordinary culinary journey with the launch of its latest seasonal tasting experience, “Cantonese Rhythm, Urban Reverie.” Available until 31 August 2026, the immersive menu reinterprets the soul of Cantonese cuisine through refined craftsmanship, premium ingredients, and elegant contemporary presentation.

Leading the culinary vision is Executive Chinese Chef Suen Kam Sing, whose impressive career spans numerous Michelin-starred and award-winning kitchens. Chef Suen believes Cantonese cuisine is a living tradition—one that should continue to evolve while honouring its rich heritage. His latest creations introduce subtle Japanese influences, incorporating sake, mirin, plum wine and umeshu to elevate familiar Cantonese flavours without overshadowing their authenticity.
The dining experience begins the moment guests enter Dynasty’s beautifully designed dining room, inspired by the elegance of a traditional Xiguan mansion. Overlooking Victoria Harbour, the restaurant is further enhanced by a breathtaking Lingnan landscape mural handcrafted from more than 13,000 bamboo pieces, creating a sophisticated setting worthy of the cuisine itself.
Among the standout dishes is the Cold Fresh Razor Clams in Plum Sauce with Deep-fried Taishan Oysters, showcasing an unexpected chilled preparation of New Zealand razor clams paired with crispy salted egg yolk oysters. The refreshing combination of mirin, sake, Japanese teriyaki and plum offers a vibrant balance of sweetness and umami.

Equally impressive is the Shredded Fish Maw Soup with Fresh Mashed Fish, Chef Suen’s elevated interpretation of the classic Shunde fish soup. Prepared daily using tiger grouper and traditional Qing Dynasty techniques, the luxurious broth is enriched with premium 25-head fish maw for exceptional depth and texture.
One of the menu’s signature theatrical moments arrives with the Cold Marinated Pigeon with Plum Wine, where Kumamoto plum wine is delicately sprayed tableside, enhancing the aromas while creating an engaging dining experience.
Comfort food receives a luxurious transformation in the Sea Cucumber Crowned Steamed Pork Patty with Shrimp Roe and Preserved Vegetables, where Spanish Iberico pork, Australian sea cucumber, shrimp roe and crispy rice combine to reinvent one of Cantonese cuisine’s most beloved home-style dishes.
Seasonality remains central throughout the menu. The nourishing Simmered Turnip and Bitter Melon with Fox Nuts in Supreme Broth highlights traditional Cantonese wellness principles, while the Poached Rice with Diced Shrimp and Homemade Seafood Broth delights diners with an aromatic seafood broth poured tableside for added theatre.
