Rooftop hotspot Cruise prides itself on a flavourful array of modern yet authentic Asian cuisines, executed with skill, sass, and a generous dose of spice. For Cruise’s newest seasonal tasting menu, Chef de Cuisine Adisak Choksamritphon draws inspiration from Bali’s Kite Festival, which traces its origins to traditional harvest celebrations at the start of the windy season. Like the colourful kites of various shapes and sizes that fill Bali’s skies each summer, from fish-shaped “bebean” kites to leaf-shaped “pecukan” kites, Cruise’s “Bali Feed Me!” tasting menu is a vibrant spectacle of diverse flavours that promises a memorable meal. Diners can look forward to a mouth-watering journey through Bali with Cruise’s take on the island’s foodie favourites, with starters including Mud Crab Salad served with calamansi vinaigrette and kaffir lime toast, Lilit Ayam – grilled minced chicken with Bali-style raw sambal, and more. For mains, guests can indulge in specials like Ikan Bumbu Merah, a perfectly-poached red snapper in Balinese curry sauce, Iga Bakar, a decadent dish of slow-roasted Wagyu short ribs with black pepper glaze and green herb sambal, as well as a classic Nasi Goreng to soak up the aromatic sauces. Be sure to save space for dessert – a Banana Tarte Tatin with a tropical spin, featuring banana coconut parfait, roasted peanuts, and gula melaka caramel sauce.
