Located in Gwanghwamun, Four Seasons Hotel Seoul is inviting the globally acclaimed pastry chef, Pierre Jean Quinonero, to kick off the new year. Recognized for winning the ‘Passion Dessert’ award from the Michelin Guide 2023 and being named the ‘Pastry Chef of the Year’ by La Liste in 2023, Chef Pierre Jean will showcase his signature item, the ‘Hazelnut & Vanilla Paris-Brest,’ and a special reinvention of ‘Strawberry Shaved Ice’ from January 13 to April 30 at Four Seasons Hotel Seoul.
Chef Pierre Jean, at the young age of 29, has gained recognition for minimizing sugar usage while utilizing the natural sweetness of fruits and honey, creating pastries with rich flavors. Currently overseeing the bakery and desserts for the entire Grand-Hôtel du Cap-Ferrat, A Four Seasons Hotel, he has earned one Michelin star for the restaurant ‘Le Cap.’
During his visit, Chef Pierre Jean will present two menus that distinctly showcase his style. Firstly, experience his iconic ‘Hazelnut & Vanilla Paris-Brest,’ featuring a unique puff pastry ring and a harmonious blend of hazelnut and vanilla cream. Collaborating with Four Seasons Hotel Seoul Pastry Head Chef Jimmy Boulay, they have also created ‘Strawberry Shaved Ice,’ a reinterpretation of Vacherin Frasie, combining Korean strawberries with meringue and Chantilly cream.
These special items can be enjoyed at Four Seasons Hotel Seoul’s lobby lounge ‘Maru,’ and the ‘Hazelnut & Vanilla Paris-Brest’ is also available at the hotel’s bakery ‘Confections by Four Seasons.’ Prices are 22,000 KRW for the small size, 98,000 KRW for the large size of ‘Hazelnut & Vanilla Paris-Brest,’ and 98,000 KRW for ‘Strawberry Shaved Ice.’
