Pamper your palate with a distinctive collection of dried seafood delicacies crafted by our award-winning Dynasty chefs and experience a taste of summer by pairing the delicacies with unconventional California wines while celebrating the California Wine Month with us! Be delighted by the unusual flavours of premium Braised Whole Yoshihama South African Abalone with Superior Oyster Sauce (27 heads – HK$ 418 per person; 19 heads – HK$ 850 per person). Our chefs meticulously prepare the premium dried Yoshihama Abalone for days in advance to excel its delicate texture and unleash its natural umami flavour, before braising it in a thick stock with chicken meat and feet, pork ribs and thighs seasoned with rock sugar for 3 hours, presenting diners an unusual lavish flavour. Stewed Whole 25 Heads Fish Maw with Goose Web (HK$ 288 / per person) requires delicate craftsmanship with two traditional ingredients. Goose webs first need to be fried and then stewed with geranium, star anise, oyster sauce and sugar for two hours until they are softened and have absorbed all essence of the seasoning; while the fish maw required soaking in water for a day and then stewed with plaice, gingers and leaks for five hours. The two exceptional ingredients are enhanced with homemade oyster sauce, orchestrating a sublime indulgence for your enjoyment. Pair the dishes with Orin Swift Abstract 2018 (HK$ 195 per 150ml; HK$ 990 per bottle). The rich notes of dark plum and ripe framboise go well with the homemade oyster sauce and will take the complex flavours of the dish to the next level.

Elevate the opulent flavour of the Baked Crab Shell Stuffed with Crab Meat and Onion(HK$ 220 per person) with Orin Swift Slander Pinot Noir 2017 (HK$ 1,380 per bottle), bringing diners a palate comprises of sweet strawberries, cranberries and traces of rhubarb with a finish of toasted brioche that goes well with the bakery note of the dish. You can also pair the extravagant Pan-fried King Scallops with Vegatable in Gravy Sauce (HK$ 188 per person) with fresh and balanced Paul Hobbs Russian Valley Chardonnay 2017 (HK$ 1,480 per bottle) which is a perfect match with rich umami delicacy.
