MICHELIN GUIDE HONG KONG MACAU 2023 REVEALS SELECTION OF NEW MICHELIN-STARRED, MICHELIN RECOMMENDED RESTAURANTS AND BIB-GOURMAND RESTAURANTS FROM THE FORKS & SPOONS

<<26th April 2023 – Hong Kong>> Following the unveiling of the 15th edition of MICHELIN Guide Hong Kong and Macau at Grand Lisboa Palace Resort Macau on 26th April, 2023, The Forks & Spoons is proud to introduce 17 restaurants from its portfolio of clients that were selected for awards.

Of the 2023 selection of restaurants awarded with coveted MICHELIN stars, the following restaurants from The Forks & Spoons were newly added to the list or received promotion:

Newly promoted MICHELIN Green star recipient, MORA (摩) Hong Kong, the intimate 28-seater modern French x Chinese soy cuisine restaurant founded by Vicky Lau, together with co-founder Romain Herbreteau and Head Chef Fai Choi, is located at the historic street of Upper Lascar Row, Sheung Wan. This iconic location connects MORA and Hong Kong’s fascinating history with the Chinese character 摩, meaning “texture”, which will be the common thread of the texture-inspired menu rooted in one of Hong Kong’s oldest culinary traditions: soy food.

JIA Group’s newly One MICHELIN-starred ESTRO is Italian Chef Antimo Maria Merone’s first restaurant, launched in partnership with JIA group. A proud Naples native, Antimo is among the vanguard of chefs rewriting the rules of Italian cuisine. Dedicated to elevating Neapolitan cuisine through modern cooking techniques, Estro’s refined tasting menus draw inspiration from Antimo’s homeland, with each dish evoking rich memories of his ancestors, history, and childhood. Bringing a global perspective to regional cuisine, Estro acknowledges Antimo’s Neapolitan roots while showcasing his innate creativity and progressive style.

Restaurants that retained their MICHELIN star(s) in 2023 include the following:

Two MICHELIN-starred TATE Dining Room led by Chef-Founder Vicky Lau. TATE Dining Room is a fine dining restaurant serving French and Chinese cuisine presented in a menu of “Edible Stories” – Chef Vicky’s artistic exploration into culinary expressionism, and a reflection of her previous life as a creative designer.

Two MICHELIN-starred Écriture is led by Executive Chef Maxime Gilbert and Chef de Cuisine Toni Au. A venture by Le Comptoir Hospitality Group and located within Hong Kong’s cultural hotspot H Queen’s, Écriture presents French cuisine elevated to new heights by uniting it with exceptional French and Japanese produce. Chef Maxime explores the endless possibilities that occur when Western craftsmanship meets Eastern philosophies.

JIA Group’s One MICHELIN-starred Andō, led by Agustin Balbi with front of house led by Julien Gardin, is a translation of Agustin’s own unorthodox journey onto the plate – one that nods at his ancestral roots while gazing at the land that shaped his craft. Andō’s innovative Spanish x Japanese cuisine is reflected by its modern tasting menus that present uncharted flavour combinations, accentuated with the finest ingredients by boutique purveyors and producers who share Agustin’s fervent respect for seasonality and heritage.

One MICHELIN-starred and MICHELIN Green Star recipient, Roganic Hong Kong is led by Head Chef Ashley Salmon. Part of the Simon Rogan empire of restaurants in UK and Hong Kong, Roganic celebrates continued success with one MICHELIN star in addition to the retention of its MICHELIN Green Star award. Roganic Hong Kong introduces elements from Simon Rogan’s three MICHELIN-starred L’Enclume in England’s Lake District, whilst sourcing ingredients locally and continuing its mission to create a better and more sustainable future for our planet.

One MICHELIN-starred CHAAT in Rosewood Hong Kong was the first Indian restaurant in history in Kowloon, Hong Kong to receive a MICHELIN star. Chef de Cuisine Manav Tuli re-imagines his favourite traditional street snacks from his childhood growing up in central India, which includes his hearty homemade Paneer Cheese and Pav Bhaji. Utilising a trio of authentic tandoor ovens, the colourful menu pays homage to the rich and varied culinary lexicon of India’s central states and Bombay coast, the northern Punjab and Kerala in the south.

One MICHELIN-starred Cantonese restaurant Duddell’s is a social and cultural destination for people who have an active appreciation for the arts. Located on the historic Duddell Street in the heart of central, Duddell’s boasts chic and relaxed interiors from designer Ilse Crawford, that are as noteworthy as the exhibitions on the walls. Duddell’s was designed to feel like guests have been welcomed into the home of a great art collector – one that also happens to have an in-house MICHELIN-starred culinary team led by new Master Chef Chan Yau Leung.

One MICHELIN-starred Yong Fu Hong Kong is the first outpost of Shanghai’s original Michelin-starred brand and has been the city’s authoritative voice on authentic and upscale Ningbo cuisine since opening in 2019. Nestled in the heart of Wan Chai, Yong Fu Hong Kong creates the authentic flavours of Ningbo using fresh local produce and seafood from the East China Sea. With exquisite skills and an impeccable sense for Ningbo flavours, Head Chef Liu Zhen blends the diverse variations of Hong Kong cuisine with the traditions of Ningbo, and continues to push the boundaries of Ningbo food culture.

MICHELIN Guide Hong Kong and Macau 2023 also revealed its annual selection of Bib Gourmand and MICHELIN Recommended Restaurants on 12th April, which were chosen based on the same criteria used for starred restaurants and recognised for serving good food at moderate prices. From this new list, The Forks & Spoons is pleased to announce the inclusion of the following restaurants:

MICHELIN Recommended Restaurants

The Legacy House, the lively Cantonese restaurant located within the ultra-luxurious Rosewood Hong Kong. The kitchen is helmed by Chinese Executive Chef Li Chi-Wai, who draws on age-old Cantonese techniques to present old recipes with a modern and sustainable twist. (MICHELIN Recommended)

Mosu Hong Kong, the highly anticipated Hong Kong offshoot of three MICHELIN-starred Mosu Seoul, brings an innovative iteration of Korean cuisine to the new M+ museum in West Kowloon. The tasting menu-only restaurant is led by Executive Chef Sung Anh and Head Chef Shim JungTaek, while the artfully designed yet minimalist space is reflective of Mosu Hong Kong’s simple, unique and ingredients-driven fine dining experience.

 Agora, the Spanish fine dining restaurant by Chef Antonio Oviedo that was opened in collaboration with JIA Group, follows the success of Oviedo’s first venture, 22 Ships. In old Spanish, Ágora translates to “now”, which alludes to Chef Oviedo’s contemporary and ever-evolving interpretation of Spanish cuisine. Agora serves dinner tasting menus that showcase Chef Oviedo’s boundary-pushing approach to Spanish gastronomy using the finest seasonal ingredients. (MICHELIN Recommended)

 

Located in the heart of Sheung Wan, Ramato is a neighbourhood Italian restaurant concept by JIA group. With a menu developed by Italian chef, Antimo Maria Merone and Head Chef Matteo Caripoli, Ramato serves southern Italian comfort fare with family-style charm and contemporary touches. Black Sheep Restaurant’s Ho Lee Fook is a Chinese restaurant by Chef ArChan Chan with a Hong Kong heart, a flag-bearer for the city whose cuisine and culture it represents, a vibrant celebration of late-night, neon-soaked sophistication. Meaning ‘good fortune for your mouth’, Ho Lee Fook brings to life a deep appreciation and passion for Cantonese cuisine with a boisterous experience steeped in heritage, grounded by our shared love of good food and great company. Bib Gourmand Restaurants

Ah Chun Shandong Dumplings (inside BaseHall 02) is a popular Lai Chi Kok joint famed for its age-old family recipe for daily handmade dumplings and hand-pulled noodles crafted with love. (Bib Gourmand)

 

Both Street (inside BaseHall 02) offers Taiwanese street food with a focus on limited daily handmade gua bao (stuffed bun), with its original shop located in Yuen Long. The fresh, fluffy buns are made in-house, and due to limited quantities daily, are often sold out by 5pm. (Bib Gourmand)

 

Chiuchow Delicacies (inside BaseHall 02) serves up authentic Chiu Chow cuisine at wallet-friendly prices, including its signature famed sliced marinated goose using prized lion-head geese, and baby oyster omelette. (Bib Gourmand)
