Cucina is excited to welcome back Michelin-starred Chef Paolo Barrale from August 14 to 18. For this five-day guest shift, Chef Paolo will blend tradition and innovation, offering a modern twist on authentic Sicilian cuisine.

Chef Paolo is renowned for his ability to adapt various culinary styles, infusing traditional Italian gastronomy with vibrant flavors and modern presentations. His special menu at Cucina features dishes like lobster with cauliflower purée, lobster bisque, yuzu kosho, and puffed rice, showcasing a mix of succulent lobster, creamy cauliflower, zesty yuzu, and crispy rice for texture.
Another standout dish is the ziti pasta with Genovese sauce, marinated tuna belly, carrot, and passion fruit, blending classic Italian flavors with tropical notes. The braised veal cheek “pizzaiola style” with green peppers and mashed potatoes with provola cheese features the unique Southern Italian friggitelli pepper, perfectly complementing the rich veal.
For dessert, diners can indulge in milk foam with strawberry sorbet, meringue, and strawberries marinated in vinegar, highlighting Chef Paolo’s creativity with contrasting textures and flavors.
Chef Paolo’s signature dishes will be available from August 14 to 18. A four-course tasting dinner is priced at HK$888 per person, with an à la carte menu offered during lunch and dinner. An exclusive wine-pairing tasting dinner (HK$1,288 per person) will be available on August 16, featuring wines from Gulfi and Cantine Pellegrino wineries in Sicily.
