Popinjays Elevates Hong Kong’s Rooftop Dining with New Dom Pérignon Bar and Caviar & Crudo Experience

Perched high above Central, Popinjays at The Murray, Hong Kong, a Niccolo Hotel is introducing an elegant new rooftop experience that celebrates the flavours of the Italian coastline. Launching now to 27 September 2026, the Dom Pérignon Bar with Caviar & Crudo Indulgence pairs premium champagne with pristine seafood, offering one of the city’s most luxurious sunset dining experiences.

Held every Thursday to Sunday from 5pm, the seasonal concept transforms the rooftop into an indulgent destination where panoramic views of Hong Kong’s skyline meet the refined simplicity of Italian coastal cuisine.

At the heart of the experience is The Murray’s exclusive caviar selection, featuring N3 Amur and N7 Kaluga caviar served traditionally with blinis, sour cream and bread chips. Guests can choose from a range of portions, making it suitable for both casual indulgence and celebratory occasions.

Caviar and Crudo

The accompanying Crudo Selection showcases carefully sourced seafood prepared with minimal intervention to highlight its freshness. Signature dishes include Ostrica, combining fresh oysters with Amur caviar and grapefruit; Gambero Rosso, featuring Sicilian red prawns with lemon and nasturtium; Tonno, a bluefin tuna tartare with fregola and extra virgin olive oil; Ricciola, delicate amberjack finished with jalapeño; and Capasanta, Hokkaido scallop carpaccio complemented by spicy tomato and crispy shallots. Each dish is elevated with Amur caviar, creating an elegant balance between rich ocean flavours and vibrant seasonal ingredients.

No caviar experience would be complete without exceptional champagne. Guests can enjoy Dom Pérignon Vintage 2017 by the glass or bottle, alongside rare labels including Dom Pérignon Luminous Vintage 2013 and Dom Pérignon Rosé Vintage 2009. For those seeking something more playful, Popinjays also introduces two champagne cocktails: the Imperial Jasmine, combining Dom Pérignon with strawberry and cold brew jasmine tea, and the Pérignon Star, infused with passionfruit and tonka bean.
