Red Sugar at Kerry Hotel, Hong Kong presents the brand-new cocktail menu “Liú” (流), a sensory journey that masterfully translates the ancient Chinese philosophy of the Four Seasons (四時節氣) and the symbolic Four Gentlemen (四君子) into a series of exquisite, modern libations. “Liú”, the Chinese word for liquid or flow, embodies the essence of Liquid Poetry for all seasons—a curated collection of elixirs, artfully designed to represent the seasons and virtues in Chinese culture—grace, resilience, integrity, and elegance and is expressed through refined and uniquely Chinese flavours.
Conceived in harmony with the culinary artistry of Hung Tong, the Cantonese restaurant housed in the hotel, these poetic concepts are grounded in the rich, tangible world of Cantonese flavours. Employing techniques such as fat-washing and, tea infusions, and smoke aromatics the collection elevates classic Cantonese flavours—like Chenpi, salted plum, and chrysanthemum—into sophisticated cocktails that feel familiar and unmistakably Chinese.
