At its peak during the coldest months, the winter truffle reveals a deeper, more complex aroma—earthy, savoury and elegantly lingering—captured across two limited-time creations designed to elevate the season’s most memorable moments.
Qura Bar Périgord Black Truffle Menu

At Qura Bar, Regent Hong Kong Culinary Director Chef Ciro Petrone and Qura Bar Head Chef Raymond Yip present the Qura Périgord Black Truffle Menu—a refined four-course experience guided by classical technique and modern finesse. A signature highlight is the art of hand-pinched plin ravioli: delicate parcels sealed with precision to hold the truffle’s perfume, then paired to let its richness unfold with clarity, balance and quiet intensity.

The Lobby Lounge Black Truffle Chestnut Tart

To complement the savoury journey, Executive Pastry Chef Andy Yeung and Sous Chef Chase Tse present the Black Truffle Chestnut Tart at The Lobby Lounge, available exclusively in January. This seasonal creation is crafted as a study in layered textures and flavours, each tier offering a new conversation between truffle, chocolate, and chestnut.
It opens with a silky chestnut cream subtly perfumed with black truffle oil, setting a foundation of earthy elegance. Resting above is a light bitter chocolate mousse enriched with truffle paste, bringing aromatic lift and refined depth. At the centre, a smooth extra‑bitter chocolate crémeux adds richness and quiet intensity. These elements come together within a chestnut tart shell filled with gently baked chestnut cream, whose natural sweetness harmonises the composition. Designed for true pastry aficionados, the tart reveals itself with every bite—from truffle’s earthiness to chocolate’s lingering resonance to chestnut’s comforting warmth.
