Rozan, a modern 8-seated Japanese restaurant under the Lai Sun Dining Group, is located in a corner of bustling Wan Chai and was previously only open to VIP members and offered a chef’s choice menu under the leadership of new Head Chef Takashi Hasegawa. The group is delighted to announce that they are now opening the doors of Rozan to the public, providing an elegant and intimate kappo-style dining experience that showcases the diverse and exquisite traditional craftsmanship of Japanese cuisine.
Japan’s Showa period in the Kansai region, is a culinary art form that emphasizes the use of seasonal ingredients that are fresh and rare. With excellent knife skills and diverse cooking methods, the chef creates unique seasonal flavors that are both delicate and complex. Born in Hokkaido and graduated from a culinary college, Chef Hasegawa Takashi has become a master of Japanese cuisine with over 17 years of experience working in some of the world’s most renowned kitchens. He has trained in a variety of Japanese culinary style and developed a deep understanding and passion for the art of Japanese cooking. “Balance of different flavours is the key to the harmonious cuisine, while I am also good at bringing out the best of seafood dishes made by top-quality ingredients fresh from the sea.” At Rozan, Chef Takashi showcases his incredible talent and passion where he creates tailor-made and unexceptional Japanese dining experiences.
