As part of its ongoing efforts to provide diners with a wide spectrum of specialty ingredients from all corners of the world, The Royal Garden’s Sabatini Ristorante Italiano now has a French black winter truffle menu.

One of the most precious of ingredients available today, in the kitchen black truffles are sometimes called ‘black diamonds’ as they are regarded by those in the know as culinary gems. Their availability is limited as their growing conditions are exceptional: they are only found 20 to 40 cm underground and only survive where the temperature is between 4℃ and 10℃ and humidity between 70% – 80%. Maturing in winter, French black truffles are noted for their deep blackness and strong aroma.

Sabatini has matched black truffles from France with a selection of delicious Italian cuisine. For example, Homemade tagliolini with wild mushrooms, black truffle ($468), overflows with the aroma of freshly shaved truffle. Other specialties include Cannellini bean soup with scampi tail and shaved black truffle ($248), Boston lobster Risotto with Japanese soft boiled egg and shaved black truffle ($528), Organic Italian scrambled eggs on toasted bread, seared Hokkaido scallop and shaved black truffle ($368), Homemade Fettuccine with Tuscan sausage shaved black truffle ($428), Mayura beef fillet with sautéed porcini and saved black truffle ($688), Iberico pork chop with chestnut puree and shaved black truffle ($488) are so attractive and colourful that diners will be unable to resist the temptation.
