Savour Freshwater Fish Special Ties at The Chineses Restaurant

Indulge in a series of nicely crafted freshwater fish delicacies at The Chinese Restaurant this coming spring. Using a variety of freshwater fish, Head Chef Kwai-kai Lo will showcase his culinary art in his dishes in March and April.

Take a light and refreshing soup to start your fish feast. Chef Lo recommends simmered fillet of water goby with pepper and superior soup, where the smooth and sweet fish fillets go perfectly with the slightly peppery clear soup, as well as the minced fish soup with bean curd and preserved vegetables, which is specially prepared with a vegetable called “cuan cai” imported from Hangzhou.

Steaming can retain the fish flavour best and condiments used to match with the fish also matter. For instance, Chef Lo uses shredded pork, mushroom, tangerine peel to steam marble goby with premium soy sauce, while using black bean sauce to steam yellow fish,  allowing diners to try two distinct fish flavours complemented with the best sauce and condiments. Steamed eel and rice with tangerine peel and soy sauce is also a highlight, in which aged tangerine peels add a citrus hint to the dish, with the rice infused fully with the eel flavour.

There are also other must-eat delicacies on the menu for selection, ranging from braised fish tofu with shallots, braised grass carp belly with ginger and spring onions and baked grey mullet with rock salt, to cat fish in clay pot with garlic, shallot and premium soy sauce, fried marble goby with spring onion and premium soy sauce and stir-fried sliced fish cake with arrowroot and celery.

The Chinese Restaurant combines a modern art deco design masterfully blended with the essence of a traditional 1920s tea house, serving authentic Cantonese dishes. There are two private rooms for 8 and 12 persons respectively.
