Racines, the newly awarded one-MICHELIN-starred Southern French casual fine dining restaurant, invites you to embark on an unmatched gastronomic journey with its new Spring menu, meticulously curated by chefs and co-owners Romain Dupeyre and Adrien Castillo. Starting on 21st March, Racines welcomes diners to enjoy a 6-course menu featuring new creations combining seasonal ingredients and French culinary techniques, elevating French classics.
The spring menu introduces new dishes to Racines’ multi-course repertoire with highlights such as Spanish Carabineros, red prawns lightly poached in lavender olive oil, topped with fresh lemon zest and fleur de sel and accompanied by a lavender-infused prawn consommé jelly, red prawn vinaigrette, broccoletti, and basil pureé; and Golden Threadfin Seabream, pan fried in orange and tarragon butter, served with pan-fried white asparagus and garnished with slices of raw white asparagus, French cockles, fresh blood orange pieces and bronze fennel.
Ending the journey of gastronomic delights is Racines’ Sweet Potatoes dessert. Expect a complex and flavourful combination of poached sweet potatoes in clementine syrup mixed with honey, tonka and coffee beans, finished in honey and tonka bean powder and mixed with coffee and chocolate custard. In the middle of the plate is a clementine jam mixed with diced fresh clementine, clementine purée and sweet potato purée, topped with an espuma of sweet potatoes and clementine custard, a scoop of sweet potato and clementine sorbet, then garnished with coffee powder and coffee mandarin vinaigrette for a finishing touch.
The 6-course menu is priced at HKD1,688 per person. For weekend lunch, diners can choose from a 3-course menu(HKD$888), a 4-course menu (HKD1,188) or a 5-course menu (HKD1,488). Racines is open for lunch from 12 p.m. to 3 p.m. on Saturdays and Sundays and dinner on Thursdays through Mondays (closed on Tuesdays and Wednesdays) from 6 p.m. to 11 p.m. Reservations can be made here.
