Usually discarded on regular rock oysters, “Pearl Meat” on larger pearl oysters is considered a rare delicacy and has never been available in Hong Kong, until now. Spasso, the DiVino Group’s Tsim Sha Tsui East harbourside restaurant, is pleased to announce the launch of Pearl Meat on the menu for the month of September.
Pearl meat is the adductor muscle that attaches the hand-sized oyster to its shell. On typical oysters, it’s considered too small to be worth eating but on monster Pinctada Maxima pearl oysters, the translucent meat can be flash-fried or sliced sashimi-style which is exactly what Chef Michele does with this epicurean delight.
Why oysters? Oysters have long been relished for both their taste and also their unique health benefits including aiding weight loss, boosting metabolic activity, increasing tissue repair and growth, lowering cholesterol levels and improving one’s immunity. Furthermore, oysters are considering a powerful aphrodisiac and can improve blood circulation.
Pearl Meat dishes include Paspaley Pearl Meat “Cheviche”. Australian South Sea pearl meat is marinated with crème fraîche, lime, wasabi, Habanero chilli, fresh coriander and Japanese soya sauce, then garnished with Asian baby cress.
Priced at $188 & 10 percent service charge, the dish is only available from September 2 to October 3, 2014.
