The Henderson Unveils Peridot – Hong Kong’s New Sky-high Destination for Terroir-inspired Cocktails and Pioneering Plant-based Cuisine
Hong Kong – Following the successful debut of Akira Back, The Henderson continues to redefine Hong Kong’s dining scene with its latest visionary concept — Peridot, opening soon at Summit 38 on the 38th floor.
Set high above Central, Peridot is a bold, avant-garde space that brings together cutting-edge mixology, fermentation-forward plant-based haute cuisine, and striking interior design — all set within a surreal lime-green landscape with panoramic views of Hong Kong’s skyline.
A New Era of Terroir-Inspired Mixology
At the core of Peridot’s identity is its Global Terroir Cocktail Programme, an ever-evolving concept curated by Director of Beverage François Cavelier. The programme celebrates the “terroir” — the environmental character that shapes each spirit’s taste, from soil and climate to local craftsmanship.
The debut edition spotlights Kagoshima, Japan, renowned for its sweet potatoes and artisanal shochu, enriched by volcanic soil from Sakurajima. The cocktail collection pays tribute to this region’s natural richness through locally inspired ingredients and exquisite glassware such as Satsuma Kiriko crystal and Tateno Pottery.

The 3 a.m. Whisky – Kanosuke Single Malt with Maillard black apple decoction, Dolin Rouge vermouth, and whisky-infused yuzu chocolate.

Nude Study – Akayane Yuzushu and Ketel One vodka balanced with Timur pepper cordial and hot bitters, crowned with a Japanese citrus cloud.

Durian’s Consent – An audacious blend of Daiyame Imo Shochu, Havana Club Rum, and Wray & Nephew Overproof Rum, accenting the sweet funk of Musang King durian.
Beyond the signature cocktails, guests can explore one of Asia’s most extensive rare spirit collections — from vintage single malts to artisanal agave distillations. Select bottles are even available for next-day delivery.
Fermentation-Forward Plant-Based Haute Cuisine
Complementing the bar programme is an equally inventive culinary offering by Chef Lisandro Illa, an Argentinian chef celebrated for his time at Noma and Popl in Copenhagen. At Peridot, Chef Illa redefines plant-based cuisine through artistry and science, utilising complex fermentation processes — many dishes taking over 48 hours to perfect.
The menu features both refined bar snacks and 3- or 4-course tasting menus, each plate presenting vegetables and nuts in unexpected forms — from nut-based cheeses to fruit-derived charcuterie.

From Thursday to Saturday, the atmosphere comes alive with soulful performances — from live piano and international saxophonist Veronika Semylit to guest DJs spinning into the early hours (until 2 a.m.), creating a seamless transition from dining to late-night revelry.

Designed by Studio Paolo Ferrari, Peridot’s interiors embody Natural Futurism — a philosophy that merges organic shapes with futuristic materials. The result is a luminous, lime-green wonderland wrapped in soft frosted cylinders, 20,000 hand-crafted lights, sculptural marble surfaces, and mirrored steel elements that shift with every angle of light.
A light-green grand piano serves as the centrepiece, grounding the space in creative energy. Whether drenched in daylight or aglow under the evening hues, Peridot radiates vibrancy, sophistication, and artistic daring.
