The Murray, Hong Kong, a Niccolo Hotel, has announced the appointment of Fernando Corona as its new Executive Chef, marking an exciting new chapter for one of Hong Kong’s most celebrated luxury hotels.
Bringing more than two decades of international culinary experience, Chef Fernando joins The Murray with an impressive résumé built across Michelin-starred kitchens and world-renowned luxury hotels. His appointment reinforces the hotel’s commitment to delivering exceptional dining experiences while further elevating its award-winning restaurant portfolio.

A Return to Hong Kong
Chef Fernando’s appointment marks a welcome return to Hong Kong, where he previously played a pivotal role in the successful opening of Rosewood Hong Kong.
As Executive Chef, he led culinary operations during the landmark hotel’s launch and contributed to its multiple Michelin-star achievements, helping establish one of the city’s most acclaimed dining destinations.
His return reflects both his strong connection to Hong Kong’s vibrant culinary scene and his passion for creating memorable dining experiences.
A Distinguished Global Career
Before joining The Murray, Chef Fernando served as Executive Chef at Rosewood London, overseeing several of the hotel’s signature venues, including the renowned Holborn Dining Room, Mirror Room, and the award-winning Scarfes Bar.
His international experience also includes leadership roles at Rosewood Beijing, further strengthening his expertise in luxury hospitality and large-scale culinary operations.
Originally from Mexico, Chef Fernando refined his culinary philosophy while working at two of the world’s most respected restaurants—Arzak and El Celler de Can Roca, both holders of three Michelin stars. These experiences shaped his dedication to technical excellence, seasonal ingredients and innovative cuisine.
