For two evenings only, NIWA will surrender its omakase counter to a singular culinary voice. On 28 and 29 June at 7:00pm, Chef Rania Hatoum of Tarte by RH and RH Fine Dining will take over the restaurant for an exclusive kitchen takeover, bringing her distinctive vision to the heart of NIWA’s omakase experience.

Known for her meticulous treatment of luxury ingredients and her ability to weave French refinement with Japanese sensibilities, Chef Rania has cultivated a devoted following through dishes that feel at once opulent and deeply personal. For these two nights, she steps into NIWA’s intimate Soho sanctuary, shaping an experience that follows the familiar progression of the restaurant’s Dinner Omakase while introducing a collection of her most celebrated creations into the flow.

Nineteen-Course Journey Through Sea, Season, and Craft

Priced at HK$2,580 per person, the menu unfolds as a measured procession of nineteen courses. The evening begins in NIWA’s signature style, making an immediate statement with one of Chef Rania’s most recognisable creations: her signature Tarte. Here, Ossetra caviar and Hokkaido uni rest atop delicate layers of dashi jelly and shiso crème fraîche, creating a composition that is simultaneously briny, creamy, and ethereally light. This striking introduction then gives way to a refined selection of an opening Appetiser.

For further indulgence, Chef Rania’s celebrated Golden Bowl is available by pre-order as a supplementary add-on for HK$588 per person. This decadent dish features a rich foundation of black truffle foie gras riso and A4 Kagoshima Wagyu, crowned with Kristal caviar, Hokkaido uni, ikura, and 24K gold flakes. Finished with chives and crispy garlic, it is a masterclass in luxury: rich in flavour, yet carefully balanced in its execution.
