The innovative exploration of “Dried Seafood in Japanese Kappo Cuisine” has captivated the interest of Charles Cheung, the Executive Chef of Catty and Tael, embodying the emerging generation of Cantonese chefs in Hong Kong. Embracing the significance of “performance” in contemporary culinary practices, Charles, as a next-generation Chinese chef, admires the ethos of Kappo’s interactive cooking style. The upcoming collaboration between these two brands in September promises a distinctive dining affair, harmonizing the essence of two rich culinary traditions.

Presented in collaboration by Chef Charles Cheung and Chef Masaki Nishioka, guests are welcomed to indulge in a fusion of contemporary Cantonese and Japanese flavours! Featured dishes include Catty and Tael’s Dried Abalone and Fish Maw Tempura with Lava Abalone Sauce, alongside Steamed Shrimp Dumplings with Yuzu and Steamed Egg Custard with Crab Roe, both highly esteemed by the chefs themselves.

Join us for a special collaboration event between Wa-En Kappo and Catty and Tael for two exclusive nights on September 27th and 28th, 2024 (Friday and Saturday). Charles Cheung  – Graduated from the Hong Kong University of Science and Technology, began his career at the Regal Hotel’s Ah Yat Abalone. With expertise in crafting exquisite dishes featuring abalone and fish maw, along with a mastery of contemporary Cantonese cuisine, he stands as the founder and the Executive Chef of Catty and Tael.

Wa-En Kappo Executive Chef Masaki Nishioka

Masaki Nishioka, the Executive Chef of Wa-En Kappo, is known as a master of Kappo Cuisine, inheriting his father’s culinary skills and carrying the passion of a chef in his blood. With a rich family background in Kappo cuisine, Chef Masaki has over 30 years of experience in the culinary industry. He started his career at the age of 15 and quickly rose to the position of Head Chef. He received training under renowned Japanese Chef Hide Yamamoto and earned great acclaim.

Despite having travelled to many places, Chef Masaki possesses a gentle and easy-going personality, which sets him apart from traditional Japanese master chefs. However, when it comes to cooking, he demonstrates a meticulous and dedicated artisan spirit. Chef Masaki expresses his personal love for Japanese cuisine, even after visiting numerous locations, and he enjoys introducing the cultural essence and flavours of Japanese cuisine to a wider audience.
