The concept draws from the 19th-century Japonisme movement, when Japanese aesthetics transformed Western art and design. Here, that same spirit of cross-cultural discovery plays out on a tiered afternoon tea stand, with Japanese ingredients woven into the meticulous traditions of French pâtisserie.

A Savoury Tier That Celebrates the Sea

The savoury selections lean heavily into ocean flavours. Tuna arrives wrapped in compressed cucumber and topped with Ikura caviar, finished tableside with a chilled kombu consommé — an elegant theatre that sets the tone. A charcoal shell cradles a crisp oyster with lime shoyu and ebiko caviar, and a komyaku-infused prawn wrapped in somen noodles gets a dusting of premium matcha. For those who prefer something richer, seared Wagyu glazed in teriyaki miso comes paired with aosa nori and Ossetra caviar — a combination that brings together the best of Japanese umami and fine dining luxury.

French Pâtisserie Gets an Eastern Makeover

The sweet tier is where the East-meets-West concept truly shines. A yuzu mousse balances bright citrus against the gentle bitterness of matcha. A classic hazelnut financier is elevated with kombucha ginger cream, while the Mont Blanc — that beloved French chestnut confection — reveals layers of almond sponge, whole chestnut, raspberry compote and maple Chantilly. Nama chocolate infused with roasted hojicha delivers a smooth, deeply satisfying finish.

Even the scones get a seasonal Japanese-inspired update, made with Hokkaido milk and Sakura cranberry, served alongside clotted cream and house-made melon and peach honey jams.

The Setting: Baan Borneo Club, 26th Floor

What makes this experience especially notable is the venue. The Baan Borneo Club sits on the 26th floor of 137 Pillars Suites Bangkok and is typically reserved exclusively for hotel guests — making this afternoon tea one of the few opportunities for non-guests to access the space and its panoramic Bangkok skyline views.

Executive Chef Korawit Rungchat describes the creative direction: “Like the 19th-century Japonisme movement, our new collection is about discovering beauty in contrast and balance. We approached Japanese flavours and French techniques with fresh eyes, finding new ways of seeing through craftsmanship.”

The Art of Japonisme afternoon tea is served daily from 12:00 pm to 5:00 pm, from 1 June 2026 through 31 May 2027.
