Flint at JW Marriott Presents ‘Imperial Tastes of Umami & Kokumi’ Menu

Hong Kong – Flint, the renowned grill house at JW Marriott Hotel Hong Kong, is pleased to present an exclusive culinary collaboration with the celebrated Japanese restaurant Sagano and Exotica Umami (Ex M) Sauce. This partnership culminates in the ‘Imperial Tastes of Umami & Kokumi’ menu, a gastronomic journey that weaves together the complexity of flavour and the elegance of Japanese cuisine with contemporary finesse and grilling craftsmanship, offering diners an unparalleled culinary experience.

Inspired by traditional Kyoto-style cuisine, a hallmark of Sagano, the menu seamlessly combines refined culinary heritage with the innovative spirit of Flint, a destination renowned for its international grilled delicacies. Bringing together these two worlds through depth of flavour, Head Chef Chris Chan of Sagano and Executive Chef Tony Wong of JW Marriott Hotel Hong Kong expertly incorporate Exotica Umami Sauce into each dish. Drawing on an ancient Roman recipe dating back 2,000 years, this versatile sauce delivers complex notes of umami (savouriness) and kokumi (richness), enhancing textures and complementing the natural flavours of seasonal ingredients.

The 10-course curated menu showcases a medley of exquisite dishes, creating a truly satisfying feast. Seafood highlights include Tuna Sushi, Grilled Hokkaido Crab Leg with Butter, Grilled Black Cod with Saikyo Miso, and Grilled Sea Bream Claypot Rice. Guests can also savour elevated Japanese favourites such as Chicken Yakitori, Deep-Fried Pork Chop, Kyoto-Style Pan-Seared Duck Breast, Sautéed A5 Wagyu Beef, and Grilled Dengaku Eggplant with Miso. The culinary journey concludes on a refreshing note with Green Tea Ice Cream with Yuzu Chocolate, offering a harmonious balance of earthy and citrus flavours.

The ‘Imperial Tastes of Umami & Kokumi’ tasting menu will be available at Flint during dinner from now to 31 August 2026, priced at HK$1,200 per guest.
