Chinesology Presents “Tales of History” Tasting Menu
Inspired by the legacy of the Manchu-Han Imperial Feast, this lavish dining experience reinterprets artistic and cultural heritage for contemporary palates
At a time when heritage is increasingly being revisited through a contemporary lens, Chinesology introduces a tasting menu that leans into history rather than novelty. In collaboration with the Hong Kong Museum of History, the restaurant presents the “Tales of History” Tasting Menu, a concept that draws from the legacy of the Manchu-Han Imperial Feast and translates it into a modern dining context.
The timing aligns with the reopening of the “Hong Kong Story” permanent exhibition, where culinary heritage is positioned as a reflection of the city’s evolving identity. Archival materials, including rare 1960s banquet menus, serve as a reference point, grounding the menu in something tangible rather than purely conceptual.

The approach is less about recreation and more about interpretation. Culinary Director Saito Chau works from the structure and philosophy of traditional Chinese banquets, applying contemporary Cantonese techniques to reshape familiar formats. The influence of historical consultants, including cultural scholar Dr. Sonia Ng and veteran gastronome Master Wan Tat Kong, adds another layer of depth, ensuring that the narrative remains anchored in authenticity.
The result is a menu that moves through courses with a sense of progression, echoing the rhythm of traditional banquets while adapting to present-day expectations. Dishes such as marinated geoduck with aged Huadiao wine and braised bird’s nest in superior broth reflect a balance between technical precision and cultural reference, where flavour is guided as much by history as it is by execution.
Rather than presenting heritage as something fixed, the menu suggests it is still evolving. It acknowledges the structure and symbolism of the past, but allows space for reinterpretation — a perspective that feels increasingly relevant in a city where tradition and modernity continue to coexist.
